2021 fleur tropicale cabernet franc blend
Similar to Francis Bebey's conversations with his bamboo flute, fleur tropicale is a convo between all of the different varieties of the harvest. Always hand picked fruit and wild fermented, sometimes with whole bunches and sometimes destemmed, sometimes co-fermented, and sometimes blended afterwards. Usually topped with the previous vintages lees. This year is a blend of Sauvignon blanc, Cabernet, Syrah and Riesling fermented and aged in both stainless and old french oak for 8 months, approx 80/20. Racked once by gravity and bottled 6 months ago with 10ppm SO2. This chillable light & bright red is unfiltered and unfined.
